Cyprus is an island country in the eastern Mediterranean Sea and a member of the European Union since 2004, which currently does not have a location stamp.
It would be very nice if every country in the world had at least one location stamp that is not a flag.
The Idol of Pomos
is a stone prehistoric sculpture found near the Cypriot village of Pomos. It dates back to the Chalcolithic period, circa the 30th century BC.The sculpture is on display in the Cyprus Museum in Lefkosia (Nicosia).
The sculpture represents a woman with her arms spread and was probably used as a fertility symbol. Many similar sculptures have been found on Cyprus. Smaller versions were worn as amulets around the neck, just as this idol wears (a small copy of) itself.
In 2008 Cyprus adopted the Euro and the Idol, a representation of Cypriot prehistoric art, was chosen to be displayed on the Cypriot euro coins of 1 and 2 euro.

There are also numerous souvenirs with the Idol being sold to tourists visiting Cyprus and I think it will also look nice as a location stamp.

Nonethewiser, I did an image search for Cyprus location stamps, and came accross a pretty Bristish issue, showing a church.
I searched some more and found info on it, and it's a lovely building. Worth consideration for a stamp, maybe?

The church of the Apostles Varnava and Ilariona is located in the Peristerona Village in the Nicosia district
. Along with the church of Agia Paraskevi in Geroskipou, the churches form the only five domed church in Cyprus. The church of Apostles Varnava and llariona is dated to the end of the 11 beginning of 12 century. It possibly replaced an older church in the form of a three room arched roof basilica church.
During an archaeological excavation in 1959, part of a semicircle synthronon was found within the arch, as well as the base of the
templo. Part of the north wall of the original temple is maintained today and is linked with the west part of the temple.
The church architecture is basilica with three rooms and has an arched roof. The central room has three domes. At the centre of the side rooms, the semi-circular room is interrupted by a smaller dome that is added on the side of the central dome of the middle room, forming an exterior cross shaped floorplan of the roof. The bell tower of the temple was built during the 19th century.
The older samples of iconographies belong to the 15 and 16 centuries, while the doors of the iconostasis have also been saved and are dated to the 16 century. There is also a gypsum templo of the Middle Byzantine period from the first architectural phase of the temple.

I found the building really interesting, the form they join the cylindrical blocks at the center, and the other different shapes. Makes for a very interesting building.

A nice proposal, and something dated that early, 5,000 years old, is pretty unusual. A good idea.
I found a nice photo of a Caravanserai in Cyprus on the Wiki page you linked to, nice architecture and specially a vestige of the important trade in medieval times.
The Wiki also has an impressive photo of the Castle in the main harbour.
