(ENG) Pisco is an alcoholic beverage originally from Peru, made from the distillation of freshly fermented grape musts. Its production began in the late 16th century after the arrival of the first grapevines from Spain to Peru. Since then, pisco production has undergone various advancements, but in recent years it has experienced significant growth, becoming a highly prestigious beverage not only in Peru but also in Europe and the USA due to its traditional copper pot still distillation and the different grape varieties used. In 1990, the Industrial Property Directorate of the Institute of Industrial Technological Research and Technical Standards-ITINTEC granted the designation of origin to Peruvian pisco, and a year later, the production territory of Peruvian pisco was officially established in the coastal area of the departments of Lima, Ica, Arequipa, Moquegua, and Tacna. Currently, this distilled spirit is recognized by the World Intellectual Property Organization (WIPO) as a Designation of Origin from Peru.

Su producción comenzó a finales del siglo XVI, después de la llegada desde España de las primeras plantas de uva a Perú . Desde entonces, la producción de pisco ha sufrido diversos avances, pero en los últimos años ha tenido un gran crecimiento logrando ser una bebida destacada de gran prestigio no solamente en Perú si no en Europa y EE.UU por su tradicional elaboración en alambique de cobre y por las diferentes variedades de uva empleadas. En 1990, la Dirección de Propiedad Industrial del Instituto de Investigación Tecnológica Industrial y de Normas Técnicas-ITINTEC otorgó la denominación de origen al pisco peruano y un año más tarde se fijó oficialmente el territorio de producción del pisco del Perú en la zona costera de los departamentos de Lima, Ica, Arequipa, Moquegua y Tacna Actualmente, este destilado es reconocido por la Organización Mundial de Propiedad Intelectual (OMPI) como Denominación de Origen de Perú.

Pisco Sour is based on Pisco, a Peruvian grape brandy. Apart from the Pisco, other main ingredients of the Pisco Sour are lime juice obtained from pressing out the small, very acidy Peruvian limes, fresh egg white and Jarabe de Goma, known in the cocktail scene as well as gummy or gum syrup.
