A Polish dish a bit similar to pancakes. Racuchy are made from flour, milk, sugar, a pinch of salt and something to make them fluffly – either yeasts, baking soda, baking powder or egg white foam. Eggs, kefir and buttermilk can also be included, and a version with sliced apples inside the dough is very popular. They're pan fried in oil and often topped with powdered sugar.
There's also a savory version with potatoes.
